This keto Reuben Skillet is ready in 15 minutes or less with only 5 ingredients. It's so delicious you won't even miss the bread. Drizzled in a tangy sauce, all you need is a cast iron skillet and you can have this on the table for St. Patty's Day, or any weeknight dinner. This keto friendly and gluten free meal will delight all of your reuben loving friends and family.

Ingredients:​

  • Cooked corned beef
  • Sauerkraut
  • Dijon mustard
  • Swiss cheese
  • We serve it with this Big Mac Dressing, which is very similar to a Thousand Island dressing.
  • Salt and pepper to taste

Let's Make This Keto Reuben Skillet:

If you’re making your corned beef at home, simply follow the directions on your package. We made ours the day before and stored it in the fridge. Pro tip: pressure cook your corned beef if you are preparing it yourself, it will be fall apart tender when you’re all done!

If you are making this big mac dressing, start with that so you can store it in the fridge to cool while you are making the skillet. You can make it up to 5 days in advance if you want. We find it's even better if the flavors have a day or so to meld together in the fridge.

Preheat your cast iron skillet, then add in your corned beef and crisp it up for about 5-10 minutes. You will render out some nice fat. After the corned beef is crisped up to your liking, you can remove it from the cast iron and set it aside to crisp up your sauerkraut. Leave the rendered fat in the pan.

Add in your sauerkraut and your dijon mustard. Cook in the pan until it’s warmed up to your liking. Add a bit of fresh ground black pepper if you like.

Add your corned beef back into the pan if you removed it. Layer the meat and sauerkraut with Swiss cheese.

Place the skillet under the broiler for 5-10 minutes, until the cheese is melted to your liking. Top with dressing, and enjoy!

Recipe Notes:

This recipe is incredibly simple. It almost feels weird to call it a recipe! It's perfect for easy weeknight dinners, or Low Carb St. Patty's Day celebrations. Carb lovers and keto dieters alike will love this easy to make dish.

The only real notes we have are that if you are preparing your corned beef yourself, you can use an Instant Pot to speed up the process. For a 3-pound corned beef, it will probably need to pressure cook for about an hour and 15 minutes. This will make it shred very easily. You can do this a few days ahead of time if you'd like. You can also buy corned beef prepared at the store. There's no wrong way!

We should also note that you can use whatever thousand island dressing you like, but we prefer to make our own since it's free of any added sugar. We want to mention that we add a lot of pickle juice to our thousand island dressing and it makes it pretty liquid, but we like it like that. If you don't like your dressing so runny, just leave out some of. the apple cider vinegar and pickle juice.
