While coffee may be great year round, it is fun to switch up the flavors in your coffee to make it seasonally appropriate. Pumpkin spice coffee in the fall, a peppermint mocha in the winter and a blueberry coffee in the summer sounds like a great coffee line up!

Today we will tell you all about how to make blueberry coffee, a perfect summery treat. We make our own homemade blueberry coffee syrup using fresh berries. It doesn’t get much better than this! So let’s get brewing.

How to Make Blueberry Coffee Syrup

The first step to making blueberry coffee is to make blueberry coffee syrup. Sure, you can buy blueberry coffee syrup but we find the homemade stuff to be so much better. That real blueberry flavor can’t be beat!

Making blueberry coffee syrup is super easy. Start with fresh blueberries and you will get a syrup with a perfect, fresh, ripe taste. Here is how to make the syrup:

  1. Add the blueberries, water and sugar to a small pot and bring the mix to a boil.
  2. Lower the heat so the blueberry mix is just simmering and let the syrup cook for about 15 minutes. It will get nice and thick.
  3. Stir in the lemon juice, salt and vanilla.
  4. Pour the mix through a fine mesh strainer, pressing on the pulp to get as much syrup as possible.
  5. Let the syrup cool and then use it to make blueberry coffee!

Our homemade blueberry coffee syrup will last for about two weeks in the fridge in an airtight container. It makes about 1 cup of syrup which is enough for about 16 drinks.

The syrup will also freeze well. Store it in the freezer for up to three months. Having fresh blueberry syrup on hand, ready to use is like a dream come true!

How to Make Blueberry Coffee

Once you have your blueberry coffee syrup made, the rest of the coffee recipe is easy. You do need cold brewed coffee. Make coffee in your regular drip coffee pot but use 1 ½ times the amount of coffee ground. For example, if you usually use 2 tablespoons of coffee grounds to brew one cup of water, use 3 tablespoons of coffee grounds instead. This will help make the cold coffee extra strong and prevent it from being watered down.

Once the coffee is brewed, let it chill in the fridge. We like to make it a day in advance so it's nice and cold. The brewed coffee will last in the fridge for up to two weeks so make a bunch and it will be ready whenever a blueberry coffee craving hits.

Add the blueberry syrup and cold coffee to a tall glass. Add cream if you’d like but the coffee will already be sweet enough thanks to the syrup. Cream of milk is a good addition, though. A blueberry and cream coffee sounds irresistible.

Fill the glass with ice to ensure the coffee is super cold. Add a big straw and enjoy! Pretty easy, right?

  • Make the blueberry coffee completely then pour everything out of the glass and into a blender. Puree it until smooth then pour it back into the glass. Top the drink with some whipped cream and you will have a perfect blueberry frappuccino!
  • Use raspberries in place of blueberries. A raspberry iced coffee is pretty yummy, too!
  • Use frozen blueberries to make the blueberry coffee syrup. Only use ½ cup of water to make the syrup since frozen blueberries are much more watery.
  • Replace the vanilla extract with almond extract. This adds a nice nutty flavor that is interesting and tasty. Almond is always a great addition to coffee.
  • Make a hot blueberry coffee. Just use hot coffee, blueberry coffee syrup and cream if you’d like. Hot blueberry coffee is definitely interesting. Some people aren’t iced coffee lovers but that’s okay! You can have your hot blueberry coffee anytime you’d like.

Ingredients

  • Blueberry Coffee Syrup:
  • 1 cup blueberries

  • 1 cup water

  • 1 cup sugar

  • 1 tsp vanilla extract

  • ¼ tsp salt

  • 1 tsp lemon extract

  • Blueberry Iced Coffee:
  • 1 Tbsp blueberry syrup

  • cups cold coffee

  • ½ cup ice

  • 1 Tbsp heavy cream (optional)

Directions

  • Make the blueberry syrup first. Add the blueberries, water, and sugar to a pot and stir. Heat over medium high heat and bring to a boil.
  • Lower the heat to medium low and simmer the syrup for about 10 minutes to thicken. Stir often so the syrup doesn’t burn to the bottom of the pan.
  • Once thick, remove the pot from the heat and stir in the vanilla, salt and lemon juice.
  • Pour the syrup through a strainer. Press on the blueberry mash to extract as much juice as possible.
  • Let the syrup cool or store it in the fridge for up to two weeks in an air tight container.
