  • Veggie Broth – use homemade or store-bought vegetable broth, but you can swap it with chicken broth if not vegan.
  • Balsamic vinegar – the secret ingredient that adds a richness of flavor to the soup. Try not to skip this.
  • Seasoning – minced garlic and Italian seasoning add great flavor to this soup. Of course, you can add more or less to your taste and sway Italian seasoning for some dried oregano instead.
  • Coconut milk – this is coconut milk from a tin. If you are not vegan, you can use heavy cream instead.

Classic Version

  • 28 ounces (800g) fresh chopped tomatoes (or canned)
  • 2 cups (150g) cauliflower florets
  • 4 green onions (spring onions) finely chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic puree
  • 1 teaspoon balsamic vinegar or to taste
  • 2 cups (500 ml) warm vegetable broth
  • ½ cup (123g) heavy cream or coconut milk added at end (optional)

If you prefer the Curried Version

  • 28 ounces (800g) fresh chopped tomatoes
  • 2 cups (150g) cauliflower florets
  • 4 green onions (spring onions) finely chopped
  • 1 ½ tablespoons mild curry powder
  • 1 teaspoon garlic puree
  • 1 teaspoon ginger powder
  • 2 cups (500 ml) warm vegetable broth
  • salt and red pepper flakes to taste (optional)
